What can people do if they want to get in on the LORE side of things with the gaming industry? Writing the backstories and coming up with narratives and scripts?

A writer you mean? Well, generally you have to be able to screenwrite to a reasonable degree. There are differences between writing for film/tv and writing for games, but a lot of the same skills apply.

Not many studios have in-house writers, it's usually a contract based thing with the writer coming in for a few months and then going again.
