I'm at the end of the game (the free-roam thing after you beat the game), and I want to upgrade my Summon into a Minion. The problem is, I don't know where to find one. Are there places at the end of the game that spawn Minions? Or can they only be found during the storyline?

I'm not sure, its been awhile since I've played. I think maybe either somewhere outside of Snowspire or in the Necropolis. But I'm almost thinking once Jack is defeated they are gone because he is the one that summoned and controlled them.

That is a funny one! i have tried gettin minions for summon spell but it does not work. why im not sure, but as far as i know (plz prove me if im wrong) the assassin enemies are the best character u can get for the summon spell. 

I've actually found alot of them in the Northen Wastes region, between the Lost Bay and Arcon's Circle. There's always minions here, at least in my games - And they are there after the game too - I know, because I was always trying to find The Succubus Queen, but never did.

I dont know if this is in TLC, but in the original fable, you can find them wandering around Knothole glade. I forget exactly which region of the glade. Not the city though.

they can be found at the place in the middle of archons knot,the lost bay,and the necropolis

I upgraded my summon to a minion when I did the mission where I had to rescue the Archaeologist outside Bowerstone North. The one with the staff overwrites the one with the two swords, as I found out. That really stunk.

To be a bit more specific, the witchwood cullis gate region and tthe areas between the Lost Bay and Snowspire village.  Aside from these, it's pretty easy to get one from a plot quest.  My personal annoyance: it overwrites the white balverine despite the furry beastie's speed, toughness and damage.  (I usually get white balverine at the arena or the quest in Knothole Glade).
